Temper: | Vestri’s signature matte |
Snap: | sharp jab; Nibs showing along the edge |
Aroma 7.9 / 10
straight to the point: plain & simple cocoa w/ leather backing + a drop of Chinese take-out (sesame oil); aerates to a small soursop & sugar snap pea(!!)
Mouthfeel 13.1 / 15
Texture: | fleshy to a soft micro-crunch |
Melt: | zips w/ speed bumps |
Flavor 42.8 / 50
brown sugared chocolate -> dates, mulberries ‘n figs -> vanilla joins the party -> Nibs passively curb the sweet riot toward mamey & mango (trademark Vestri) -> backs down to brown fruits including the superhero of ‘em all – chocolate... stem winds off in a white bouquet (frangipani, pear, & white sapote)... tell-tail of Aliseo in the base
Quality 17.7 / 20
Simple, polished, & loyal. Nibs provide the subtle offset in both texture & in quelling the upfront sugar. Very workman-like (nothing spectacular in its profile nor remarkable in its processing) yet plenty of finesse.
Gets the job done without the need for accolades the same way Joe Montana’s nickel ‘n dime West Coast offense would gradually & systematically take the ball down the field. Before long... touchdown.
ING: cocoa mass, sugar, cacáo butter, nibs, vanilla, soy lecithin
