Simple, noncomplex but well-executed except for the beans &/or cacáo butter used in this must’ve been run over by a couple trucks spewing diesel on an asphalt road. Pretty much a duplicate of its big brother but that orphan of an 82% gets rescued here by almost doubling down on the sugar which creates a nice difference & restores faith in Haitian cacáo which would make a good base for a blended bar on account of all its furaneol, hyroxymaltol, & cyclotene compounds heated up in the Mailliard Reaction for that caramel. Then those spice hits toward the end, add up to the little bean that could – shades of Grenada’s chocolate chug.
