Rapid devolution, the sugar dissolves swift & urgent, to compress flavor sequence into an onrush when everything evaporates nearly at the same rate. Definitely too sweet – teeth aches screaming ‘ouch’. A demo, really, for the combined effects of cacáo seeds + citrus rinds on sugar. But an astonishing development too in that stupendous if fast fruit package up front, interrupted by discordant mid-palate talc, resolves well enough to fruitcake spices for a little holiday freak.
