At dawn a little over a century ago, the face of Turtle Mountain slid down onto the town of Frank in Alberta, Canada -- the next province over from where this small chocolate maker hones its craft.
The collapse sent millions of tons of limestone tumbling into the valley below, burying several buildings on the outskirts of that coal mining village. Dozens died but only a handful of bodies were recovered from the rubble.
Scientists surmise that the mountain was unstable due to the formation of limestone resting atop softer materials which, after eons of erosion, resulted in a steep, top-heavy, cliff.
Hmmm, could some of that have drifted over the years into this bar?

OrganicFair… the name pretty much says to all, incorporating the 2 biggest market movers in the last decade: Fair-Trade & Organic certification.
Unlike some who just plaster whatever authentic-sounding terms they want on their wrapper -- 'Direct This', 'Heritage That', 'Criollo Here', 'Wild-Harvested There' -- at least this company affixes legitimate labels, however spurious their effect, from actual active organizations.
A bar whose Flavor Profile slots into a strait & narrow confine. The kind of cacáo-into-chocolate which struggles to make a name for itself.
Definite issues with seed selection & ferment (somewhat overdone) which compounds the robust roast (the sum total a bit gaseous).
That aside, OrganicFair coaxes out a palatable result. A "starter bar"… both for the label & those consumers new to premium chocolate.
