La Tronca
by Barsmiths™ ChocolateImpact
Barsmiths™ recently took exception to a couple reviews of its bars on the C-spot®, writing "hey, what's with the insults? Really all that?"
Reply to Barsmiths™: hey, 'sup with the insulting chocolate? Really all that… whether priced for a nickel or $50.
(Apparently insulting them works. Here's a bar that shows what tough luv can do... for some.)
Glad to be of service.

Snap: | collapsing |
Aroma 9.1 / 10
Mouthfeel 12.9 / 15
Texture: | exceedingly soft |
Melt: | gossamer quick |
Flavor 42.7 / 50
chocolate bangs… several & in rapid succession -> deep espresso on the edge of the abyss -> comes back up a walnut -> lines out to a moderately light bitter
Quality 15.9 / 20
Hard on the heels of the Mesocacao debut release, this too utilizes the same base material from Giff Laube's Nicaraguan forest garden. It presents the second offering from that country by Barsmiths™; the other more ICS oriented.
This delivers point-blank center-reference chocolate. Almost all basal.
The deepest roast of La Tronca to date.
Barsmiths™ flirts with danger on it but these nuts tolerate it -- barely. A 31-minute curve peaking at nearly 300ºF. One more degree north pushes it over the edge -- the proverbial within a whisker of its life -- pre-empting any need to jump into the melanguer... as this batch enjoyed for about 2½ days.
As presently constituted, a wake-up shot to replace the morning cup o' joe, which hits its intended mark according to these chocolate makers. And frankly, flavors, that in isolation would usually draws objections, do sit well enough together in the context of the whole profile. Even the bitterness suffices in the bar's overall favor. Still, Barsmiths™ should pull the baking back some.
Ideally suited as a foundation for Blends or bakery fare.
INGREDIENTS: cocoa mass, sugar
