So distraught by the vandalism committed to Tobago's cacáo by Raùsch's alkalized 75%, Duane Dove of Tobago Estate made an offer nobody could reasonably refuse by sending this to rectify the island's reputation.

Big Brown Tobago Pride on full display.
Appearance   3.7 / 5
Color: Tobago Estate's hallmark orange-umber
Surface: foil transfer…
Temper: … shiny as aluminum
Snap: a bit plugged
Aroma   8.2 / 10
herbal bread + some really fine chocuterie with charcocoa underneath
Mouthfeel   12 / 15
Texture: fights for its release point
Melt: durable & enduring (noticeable lecithin)
Flavor   45.2 / 50
charcocoa -> green walnut fudge -> hash brownie -> herbal essence -> brown fruit (sweet tamarind + fig) -> iron-rich molasses at the center-rear spot... small breadfruit briefly contrasting -> feints some ginger spice cake -> late & latent cream -> rum raisin -> reverts back to the charcocoa top
Quality   17.4 / 20
Intensely Dark for a 70 or any percent.

This Spring-harvested cocoa produces the most brooding Tobago Estate bar to date. And in every which way… from Texture to Flavor… a thickly ponderous taste-in-tow. Of magnitude almost unreal. Minimally, & then only barely, leavened by breadfruit & a cream dot. But sweet (enough) throughout.

Other than that dot, Tobago Estate's March '14 delivers an all-brown power-pack.

INGREDIENTS: cocoa mass, sugar, cocoa butter, lecithin
