Papua New Guinea
by MānoaImpact
Large-footed Megapode birds flock around Papua New Guinea (PNG). Rather than brood their eggs, females bury them in massive nest-mounds of decaying vegetation that males then tend. Their chicks are superprecocial, meaning they hatch in a very mature state that includes open eyes, feathers &, in some species, the ability to fly right from the start.
This bar goes on a reverse course: it begins by just soaring, wide-open flavor right at the front, before burrowing into the ground.

Flavor 38.9 / 50
grilled chocolate infused with fruits galore (berries & pear + a dried one too… apricotish) -> roasted uncommon nut (wild karuka aka Pandanus antaresensis) against some expressed juice (yellow champedak pulp) & here the profile breaksdown some, splits apart, bifurcating into stump juice on top vs. roots / wood on the bottom -> smoking bitters -> soil / ground dirt -> more smoke / fire remnants -> winds up well enough on toasted almond closer
Quality 14.6 / 20
Pretty stupendous 1st quarter or so.
Controlled smoke (as far as most PNGs go), but could stand a bit more refinement to meld the back end into a more seamless unit.
As presently constituted, the compounds eventually struggle with each other, building to a tension that verges on a fight or even a clash but manages to resolve calmly, if somewhat smoldering, toward that almond inflection.
INGREDIENTS: cocoa mass, sugar, cocoa butter
