Hello Helsinki. E-troducing Levy of Finland.
They're coming out of the woodwork from all corners now, folks. even the most far-flung places.
Those proclaiming or anointing a "best" chocolate engage in more than a Faustian bargain these days but a fool's errand (this site pleads the 5th Amendment of the U.S. Constitution) -- pointless other than to justify their place & profit in the niche -- surpassed only by purveyors who hawk whatever brown shit sticks to the walls… errr, pardon, ahhh, beautiful wallpaper (re: wrappers) because good visuals sell.
The end draws nearer. Still time to prepare for the chocopalypse.

Criollo
juniper to schizandra (special combo) easy on the heels of chocolate -> brownie -> minute char at the fringes -> opening berries stay on it thru some quartz crystal refraction that bends toward pineapple-lychee (sweet) -> filbert skins
71%
gets right after it on instant pineapple-apricot -> tilts red toward cranberry backed in vetiver (classic Madagascar) -> goes all tarts streaked in gin for a veritable fruit cocktail... volatiles untethered from any base note -> mellow landing in a puckered finished

Criollo
The unconventional Madagascan from Åkesson's whitish-seed tree-stock he classifies Criollo.
Excluding the glob-job Texture, a first-rate flavor with some tags rather unique to this island cacáo -- particularly the juniper / schizandra coupling.
71%
This the more traditional Madagascar, exhibiting hi-bright fruits of acidity. Vaporizes into an all-head / no body bar.
Both bars generally on-point for the origin & the sub-genotypes.
INGREDIENTS: cocoa mass, sugar
