A lot of taste, depth, & dimension using cacáo grown on the celebrated estate featured in Presilla’s New Taste of Chocolate (pg 50-51 in the 2001 Edition). Only drawback – more hermetic technical control than natural flow (the direct opposite of El Rey’s treatment on the same bean varietal). Ergo, a synthetic ride. Translated to fiction, this bar qualifies as postmod homage to Fielding´s worldly Tom Jones in the cockpit.
