Appearance 4.8 / 5
Color: | omega brown |
Surface: | another gorgeous mold w/ whorls (moiré) on the underside yielding the illusion of liquidity |
Temper: | pro sheen |
Snap: | shears right off |
Aroma 7.2 / 10
rather closed, small musk on the inhalation + spices, big roast, & cocoa; full citric ferment on the rub down
Mouthfeel 11.7 / 15
Texture: | fat & dry |
Melt: | sand (from nibs) & elapsed as an hourglass |
Flavor 40.1 / 50
crisp snap betrays initially soft red tongue (cherry) until nibs rapidly take over -> quiet earth-driven flavors – leafy greens, grass, nut meats (particularly almond), & morel mushroom -> faint raisin back
Quality 17 / 20
In some ways the best match, though not overall flavor, of Gobino pairing Nacional nibs to single origin beans. Nibs continue to overpower but with this bar there’s at least a better degree of complementarity.
