ginger just kicks, followed on by sugar (not too sweet) -> impressive raw chocolate thunder... tremendously deep earth tones generated by strong carmelized action -> ginger burn opposite good cocoa liquor balance

Great change of pace from over-processed, over-sweetened, I-have-to-feed-my-ego-by-futzing with-a-great-bean-to-put-my-name-on-it chocolaters.
Ginger is, however, hyper-expressed (bright lightning & hot as the lone sun in Chinese mythology after Archer Yi extinguished the other 9 of them) but kept in check by great chocolate backbone creating fine palate juxtaposition between smooth & crunch, heat & base.
