Impact
The Renault or Ford Focus of milks with hazelnuts… OK to look at, no great zip or 'zazz, but dependable.
Appearance 4.5 / 5
Color: | cool sepia |
Surface: | clean |
Temper: | soft matte & light absorbing |
Snap: | right on the money for a mid-% milk: loud & clear |
Aroma 6.9 / 10
very soft nose: light cream, sugar, & slightly rancid hazelnut oil
Mouthfeel 13.4 / 15
Texture: | uber smooth (hazelnuts there in minor key only, rather than annoying codicil to the good mouth of the chocolate) |
Melt: | well paced |
Flavor 38.2 / 50
nice, round-flavored only-from-France milk cream ->clean/mild chocolate base ->quality caramel middle lubricated on hazelnuts -> rides out respectable sugar
Quality 16.4 / 20
Mid-range. Hyper processed beans, a hallmark of double tempering (1st the manufacturer, probably Barry Cacao, then the re-melter, Castelain). Good balance on the soy lecithin emulsifier (stays clear of interfering with melt or flavor). Could tolerate greater hazelnut presence.
