Nothing wickedly naughty but the peppers animate JT’s flatline 60% base with aromatics rather than heat, to prop it up, imparting stamina while paying homage to cacáo’s Mesoamerican roots by sweetly resuscitating it (if a bit sugar-happy). One of the rare bars in Torres’ collection that delivers on his culinary fame.
