The name has something to do with ‘patience’ in Italian. Then there’s the wordplay on ‘chocolate temper’. For the most part, this collection is a Guns ‘n Roses ballad - “have a little pa---tience... yeah, yeah“. For the other parts, like the signature Pavers, it’s the yellow brick road takin' ya down to Paradise City.
Presentation   4.6 / 5
mostly molds & mostly dirty-looking fuglies
Aromas   4.4 / 5
chocolate positive
Textures/Melt   7.9 / 10
Shells: varied (thick truffles; semi-thin assortments)
Centers: generally firm
Flavor   43.7 / 50
respectable balance & depth
Quality   23.8 / 30
Mixed bag: some black hounds; others just darkly-stylized ghostings. Plus, a good separate organic line with clear, honest notes, crystal balance & genuine earthly delight.
Selections
Couverture: Neuchatel; Favarger
Paver – 24-carat black gold nugga
Champagne Truffle - closest rival to Teuscher’s (where Intemperantia apprenticed)
Caprice- crescent shaped; both this & the Gianduja have a deceptive 1st rail, then build into a mounting & condensed crescendo
Orange-dipped – over-sugared confection
Toffee – slight & thin; verging downward to graham cracker crunch
Pistachio – full-on FXs; pistache paste providing for a small chocolate allowance
Classic Truffle – light cream, dark afterglow
Café – matched to butter caramel; uniquely warm & tender
Organice White Truffle – nice-on-nice
Organic Milk Chocolate - pure malt spot-on
