purpose-driven: acridly sharp, straight, clean, & pure; even a good cupper might mistakenly sip this for a Guatamalan right out of the coffee bin: snappy full-city roast, great body & balance despite non-complexity; only w/ time & aeration does an off-set nut emerge &, on the rubdown, softly high butter content (though none added) + Domori’s usual ferment / alcohol tone

fab... for fabric opener: cotton & rice paper -> draws dirt, parlays smooth & soothes into wild peanut -> bitter iron builds w/ animal intensity – hedge-hog chopped liver, slight emphasis on hedge as it goes green & meaty -> backs into bouillon of tough muscle w/ more sharp iron on an excrutiating battleground for the soul -> mushroom funk (fungi & fungus) -> peanut returns a little sweet to remove some edge – momentarily - morphs savory filbert -> drops vegetal & stalky against stone

Dense & tight strongman material. Acid is the oxygen of chocolate & here there’s just too little of it. Proves both Nacional’s inherent mettle & mercy given Domori’s unadorned approach (low roast, quick ferment [which this variety demands anyways]). Optimized thru cacáo selection & seemingly super-length conch which beats (most of) the hell out of these beans.
