Heart of Cacao
by Sacred ChocolateImpact
A semi-raw terroirist attack -- originally plotted in Ecuador -- & dropped from a butcher block no doubt rather than a barsmith's studio.
Appearance 4.5 / 5
Color: | raven brown (purple, black & chocolate) |
Surface: | only minor imperfections |
Temper: | burnished |
Snap: | a power-100 snap |
Aroma 7.9 / 10
the good Earth: pure mud spiced with ishpinga
Mouthfeel 9.7 / 15
Texture: | glob job |
Melt: | loping gait |
Flavor 24.4 / 50
wax -> butter tinged with mellocos (in the potato family) & gentian root -> soiled elements with a metallic back (horrendous) -> parasites worming thru... & stymied by that metal barrier -> pure dirt right off the ground coupled by cement / stone werks -> goes green 'n brown (fur amidst the ferns & moss) -> naturally the carrion ain't far behind (heavy hemoglobin / iron content)
Quality 7.6 / 20
Irredeemable in every aspect.
No flavor development whatsoever... just a flatliner. Unroasted but were these seeds unfermented too or just allowed to gather dust & mold in a corner somewhere?
Takes chocolate back to the days when no one had a handle on unsweetened 100%s. Now several do, even rookies -- attributable in part to the impact of I.T. on craft chocolate.
If this be the "heart of cacáo", what depravity lurks in its under-soul?
ING: cocoa bean with husks, cocoa butter
