John Henry Baylon, owner & executive director of Strita Supreme, says very little about his craft work.

Taciturn in fact.

He lets the chocolate do all the talking for him.

With such a strong stance one expects it'd be a loquacious big mouth, especially at such a high cacáo-content.

Trouble is, it's soft-spoken too.

A silent order chocolate from St. Rita that raises its voice only when absolutely necessary... & then only barely audible.

star anise on chocolate candy -> vanilla with those streaming orchids gleaned in the Aroma, underscored in girding baseline cocoa buffered by butter -> nuts (pili & chestnut) -> lone bitter at the edges -> moderately stringent finish

Neither too excitable nor too exciting. Mild-mannered, even subdued for an 80% of probable humble background. Copious cocoa butter (if slightly less than that found in Strita's 100%) adds to mute the proceedings while psychologically sweetening the package.

Vanilla then becomes the most vocal component in an overall quiet chorus.

Could benefit from a deeper ferment to develop greater flavor pre-cursors as well as a reduction of astringency.
