The ever clever govt of Venezuela, from where Brasstown sources the cacáo nuts in this Guasare chocolate, is chief perpetuator of severe shortages of all sorts from oil, diapers & other essential staples in the modern world. It has come up with a novel approach to solve the crisis: darken the malls “filled” with bare shelves & walls thru rationing electricity!!!!
Brasstown switches the lights back on in this dark bar by way of a citric shine & prolongs the sensation with a melt that lasts longer than a beeswax candle.

Confirms that the varietal -- Guasare -- of which so few have been released to date (Domori's and A. Morin) tracks more in line with the latter's up-tart ways as opposed to the former's more reposed flavor contour, that one comparatively vitally bereft & denuded, owing largely to its transplanted nature, removed from its presumed original origin in western Venezuela.
Upfront tags convey an untamed, even primordial, character. Soon enough however the more evolved impressions take hold whence it transforms into the kindest gift horse, just keeps on giving & giving on a lengthy, abiding concourse.
Acidity that pronounced & rich reflects a commensurate ferment -- long & assiduous... for up to a week &, still, no sign of ham bones or sausage tones so wreaking in over-treated cacáo. Brasstown apparently pulls the roast toward the lighter end of the spectrum to maintain both vibrance & buoyancy.
This barsmith continues to reach high & grasp the crown jewels of cacáo.

A bit top-heavy. Well, so too Christina Hendricks. And in such hi-def; almost concentrate additive level. Like she, who has Mad Men to lean on, this contains a bottom ballast for enough balance. Few can resist that.
Pretty glam-sexy &, with Brasstown's new wrapper (see image above)... well... brassy.
