3 Mexican priests gunned down by narcos in 1 week prove that in this ostensibly pious country, not even clergy are safe from violence. ‘Hey, papa, yo no baptize mi bambino, me fuckin’ kill you’.

Where’s El Chapo when you need him… to restore (relative) calm & bring peace to the countryside now that out-of-control gangs roam without a prevailing strongman to maintain some semblance of organization.

El Chapo doing Steve McQueen from THE GREAT ESCAPE, riding a motorcycle, but doing Steve even better by hopping on the hog inside the tunnel!!! & driving for a kilometer & a half til he made it to daylight. Believe that & some campesino has a tunnel to sell you as a bunker for outlasting nuclear annihilation in addition to climate change.

Please, anyone who can afford millions to dig a tunnel can pay just as much for prison guards to let him out the back door where a chopper awaits for a far more comfortable “escape”. And with their blessing (+ probably that of their el norte gringo bosses too) so that Chapo can be their law 'n order candidate on the streets.

Question remains, however, what narco balladeer is going to be commissioned to write the bestselling bandido nortena for the millions of teenage Mexican boys just yearning to get the chance to be outlaw matinees?

In the midst of all this, Michael Sacco & his Chocosol cohorts toil valiantly to rise above the mayhem in Mexico, extolling humble Theobromas bicolor and cacáo as both a link back to the locals’ ancestral glory & future prosperity.

But in the din of automatic assault weapons can anyone listen to him / them? Ahhhh, perhaps only those voluptuaries upon savoring these tlaquetzalli (precious things) described herein. Even then, the odds look long because, at current commodity prices, the payoff amounts to a hill of beans.

Try building on that.

Due to the unique proposition of Jaguar goods by Chocosol, measuring them on a scale used for chocolate would be wholly incongruent & tantamount to a false equivalence. Therefore, they are unrated.

flash lighter fluid -> corn -> cashew -> roasted bacon drippings -> bamboo shoot

INGREDIENTS: bicolor / pataxte, cocoa butter

Salted Jaguar
salt really drives home the corn nut / cashew components -> at the very tail a subtle green shoot sprout
in sum, a snack grab.... people will think they recognize it but stand mystified... 'yeah, it's... well, it's kinda like...'

INGREDIENTS: bicolor / pataxte, cocoa butter, salt

big maple -> malt hit -> hi-cream café latte -> back butterscotch -> roasted blanched almond -> more mapled-butterscotching without end
a recipe unrivaled (see ingredients below) save for Madre Cacao (which also crafted a Bicolor / Pataxte bar)

INGREDIENTS: bicolor / pataxte (75%), coconut sugar, cocoa butter, vanilla, achiote, rosita de cacao, gamey seed, sea salt

Jaguar Swirl
fundamental cocoa-caramel -> cotton candy -> vanilla malt shake -> mapling toward raisin -> turbinado sugar

Produced with Theobroma bicolor, aka Pataxte aka Jaguar -- a cousin to cacáo. Chocosol christens it 'Albino Cacao'.

Intensely mild... a flavor sure to fly right over the heads & taste-buds of most in the chocolate world. To some even colorless on the flavor wheel. Its neutral canvas at the ready to absorb the additives.

Whatever one's perception, Michael Sacco & Chocosol operate on a hemispheric perspective. He views the Americas taken as a whole as Turtle Island. From Prudhoe Bay to Patagonia, a forest garden. The emphasis: replenishing soils. Indeed, all begins & centers on the soil as seedbed of aspirations, sprout shoots, & evolving life itself.

The soil can represent ground zero. And Chocosol's mission is rooted in the indigenous spiritual ecology of the Americas. Ergo, horizontally-traded to express the direct links between them &, occasionally, transported via sailboat which minimizes the LCA / carbon print.

As such, a greater overarching quest supersedes craft / flavor / product to become a vocation of Michael Sacco & his trans-hemisphere community. They intimately understand & breathe the deep historical & cultural significance of cacáo + its relatives in a way few people do in the 21st century.
