FLAVOR PROFILE: Earthen; one-dimensional (basic cocoa); sometimes with compatible notes of coffee, wood, & spices.
CHARACTERISTICS: usually dirt brown color; aggressive, often harsh tannins / high acidity.
Grown in, & named after, the State of Bahia in Brazil located well south of the Amazon River Basin & now one of the country’s largest cacáo producing areas. An Amazon strain, ironically transplanted to Brazil starting 1746, probably from around the Orinoco River basin in Venezuela
