Some folks think of Texas only as some red state loaded with rednecks on 72 oz. steaks. Or home to “America’s Team” (thus the country, according to more than just Mr. Donald J. Hell, even the evangelical revivals around these parts in drive-thru mega-churches party on Sunday morning. That’s right, sin ‘n sing the blues Saturday night then shout gospel hymns come sunrise. Hallelujah, Lord Jesus… chocolate in Tejas (the original pre-Columbian Caddo name for the region) from whose broader whereabouts a conversion practice of Amerinds to Christianity sprouted forth a syncretism:

It all sounds so cozy -- "fire-roasted chocolate" -- except someone doused the flames with dish detergent. Yet one more example of a choc maker probably washing their grinding stones in the utility room if not the dish washer.
