Kim & Lylette of Crayfish Bay, Grenada rolls this unsweetened chocolate into elemental balls, a form that would be very familiar to the elite merchant couriers delivering chocolate, & more, throughout pre-Columbian America called the pochteca -- the FedEx of their day when it absolutely positively had to be there overland on their backs, walking up & down the high-valleys deep inside the continent where most people lived, separated by ruggedly precipitous ravines & mountain ranges scaling 12,000 feet, along steep slippery paths, some cut into crags, others crossing rope bridges to ford gorges where one misstep meant death.
They went thru all this effort & expense because the network operated with little coastal traffic or even much in the way of rivers since there were so few waterways to tie together the far-flung populous. Nor were there any beasts of burden, or wheeled vehicles to carry the load. Steamships & the railroad remained centuries away from re-routing world geography, setting in motion a revolution in space, time, & trade.
Indeed, the pochteca would feel right at home shaving this into a cup of (probably) tepid water while preparing their favorite chocolate brew.
About as native as indigenous chocolate gets.
Due to its format being relatively off-the-grid, it is unrated.

From the same grove that Pump Street sources its Grenada; the one Mott Green selected as the best cacáo on the island.
Roasted on an open wood fire. In other words, smoked cocoa. In this case, somewhere between controlled & conflagration.
Strong to state the obvious. In a word: robust.
A bar that will re-awaken most people's conception of chocolate (like just about everyone in the candy-sphere, & even many in the premium sector).
A test of strength, endurance & will for newcomers; a challenging dare to all comers. Hospitality, Crayfish Bay style.
Moreover, a taste of how it all began.
INGREDIENTS: cocoa mass
