Ghana; Madagascar
by AmbrosiaImpact
Ahhhh, Ambrosia… the food & drink of the gods (hmmm, so too Theobroma cacao [Greek for 'god-food]). Mortals who eat it become, well, immortal. Nice.
A couple bars from Ambrosia chocolate-maker out of Ontario, Canada that, upon sharing with a complete stranger, will ask "you want to have my baby?"
Uhhh, ‘no I don't’ or ‘yes I do’ could affect the rest of a life or even a day.
Answer wisely.

Ghana
rich chocolate-cream…. ambrosial indeed from, of all places, West Aftrica (considered by too many the ghetto of cocoa)
Madagascar
a very low-rider… the un-Madagascar (of sorts)
marshy & smoky to obscure vanilla-vetiver
no hallmark tarts

Ghana
instant mocha -> cinnamon -> powdered flower creeping more & more in the Ghana crop (possibly via Cameroon) -> hit by a creamer -> subtle banana-coconut -> shea butter -> goes away a peach ball on some vanilla-kola nut
Madagascar
enter hazelnuts -> flash orange blossom -> chocolate rising for a faint gianduia -> pure sweet sugar bangs -> backdrop raspberry shadows the filbert before coming fore in a role-reversal -> rear eucalyptus + a thin wood back

Ghana
Batch 2001
Underwhelming for the origin (even for a 55% Dark-Milk) as well as peculiar (flavor profile). Peaches 'n cream now showing in Ghana? Really? The solid 2x4 classic Earth cocoa vanishing quickly over the horizon in this bar. Even so most will like it, justifiably... without realizing the difference.
INGREDIENTS: cocoa mass, sugar, milk powder, vanilla, lecithin
Madagascar
66% cacáo-content; Batch 5001
Carefully calibrated from the percentage to the processing which brings out the full-spectrum in Madagascan cacáo, the 2nd barsmith (see Metiisto) to do so in as many weeks on The Chocolate Census. Just about every flavor tag known to this island cacáo induced, albeit at relatively shallow depth & magnitude. The trade-off well worth it however, as this succulent bar keeps on giving in a multitude of ways.
INGREDIENTS: cocoa mass, sugar, lecithin
Capsule Summary
Small sample-size but strong showing. Chocolate befitting Ambrosia's brand name.
